Do you dry your maize on bare ground or on a clean tarpaulin or sheet?

BACKGROUND

Currently, most of the maize grown in Uganda is harvested by hand. Considering the need for a farmer
to keep the cobs clean, to dry the cob immediately and avoid infestation of the harvested cobs, farmers
need to make sure the drying place or equipment is clean and disinfected. They should also remove old
grain and dirt from anything that will come in contact with the good or new grain.

However, most people in Kibaale region dry their maize on bare ground. This has negative effects on the
quality of the final product. The maize becomes contaminated with soil, the color changes from white to
brown or yellow, and the natural aroma is also affected.
